Our Story

Levante began with a wind.

On the eastern coast of Spain, the levante is the wind sailors watch for — warm, wet, and carrying everything the Mediterranean has to give. It fills the rice fields of Valencia, salts the air in Cádiz, and, on a good evening, follows you home to the table.

We built Levante to carry that wind a little farther west. Houston is a port city with Gulf shrimp, red snapper, and long humid evenings that would feel at home on the Costa del Sol. The pairing was always obvious to us: Spanish technique, Texas fire, Gulf water.

The kitchen turns on a wood hearth burning Texas post oak. Rice comes from the Ebro Delta and from Katy, Texas, side by side. The bar pours sherry from Jerez, vermut de grifo, and gin-tonicas built the Spanish way — big glass, botanicals, no hurry.

Dinner in Spain is not a transaction; it is the point of the day. We keep the lights low, the tables unhurried, and the sobremesa — the hour after the plates are cleared — sacred. Come early, stay late.
